Gula Air From Sumba, Nusa Tenggara Timur, As Culinary Products Used In Jakarta

Gula Air came from Tuak or Lontar Trees, a kind of palm tree, which they have lots of them in the whole island. Gula Air had replaced corn and rice as their main source of carbohydrates, and it had become tradition amongst them. This tradition made them strong enough to finish their daily physical activities without consuming any other type of carbohydrates. (Muhamad, 2015). Gula Air known as it has many health benefits. It tasted really sweet but had a low glucose content, which is good for diabetic and cholesterol patients (Fikri, 2017). It is known from local people as a medicine for various diseases and also found very good for gastric health. This research has several purposes; Identifying the history, philosophy, and culture of Gula Air in Sumba region; Identify information about ingredients and the process of making Gula Air by Sumbanese people; Analyzing sensory properties consisting of texture, taste, color, and aroma of Gula Air; Analyzing the level of Jakarta people preference towards Gula Air; Analyzing information about nutritional content contained in Gula Air; Identifying how Gula Air become one of the culinary products used in Jakarta.

This research will be conducted in three stages, thus is one of the Multi-years’ research. The first stages will be focusing on the history, culture, and the content of Gula Air itself, then continue for further research the feasibility study to be a green business and finished by conducting Marketing Mix analysis to continue market this product. This research later on will be submitted to proceeding international, with International journal output.
